Grease drains and drawers vary greatly by manufacturer. Rear drains are more troublesome than front or side style drain troughs. With rear drains the grease pan or drawer is often not pushed fully back creating an impossible to clean mess in the base of the unit. Careless operators often forget to empty the grease drawers.

If you take over an existing restaurant, as is likely, you may inherit an amount of basic refrigerators, freezers, and deep fryers. It isn't free; you paid for it. There are considerable savings to be made from using inherited equipment, even though it may look like it would fail a board of health inspection.
