Grease drains and drawers vary greatly by manufacturer. Rear drains are more troublesome than front or side style drain troughs. With rear drains the grease pan or drawer is often not pushed fully back creating an impossible to clean mess in the base of the unit. Careless operators often forget to empty the grease drawers.

A small hole drilled in the front of the drawer, just below the point of overflow, will prevent the grease from running all over under the unit and also alert the operator to the fact that the drawer needs emptying. If he still doesn't see it, the hot grease will drop on his foot. That'll wake him up. Another advantage of front or side drain troughs is that the back. splash provides a very handy place to push the product against for turning or scooping up.

Griddles constructed with the griddle plate inserted into a full bottom supporting pan will be less efficient and the temperature control inaccurate. Be sure the griddle you select has recovery capability for the volume of food you intend to serve with it. Grill area is not the only thing to consider. Investigate the heating pattern in either gas or electric griddles. Zoned control gives better product control. The ability to dial your heat choice gives more flexibility.
