Smart Touch Cooking Interface

The oven features a 10-inch smart touch flat screen with large cooking icons and vibrant graphics for simple operation. Operators can easily access programmable multi-stage cooking, manual cooking with a removable core temperature probe, and customized menu programs through the Combi Smart Touch interface.

Advanced Combi Cooking Technology

The Atosa Combi Smart Cooking system continuously monitors the cooking chamber to maintain proper temperature, humidity, and load conditions. This system allows chefs to achieve consistent cooking performance whether preparing small batches or high-volume production.

The oven supports three cooking methods: steam, convection, and combination cooking. This flexibility allows operators to roast meats, bake pastries, steam vegetables, regenerate prepared foods, or cook delicate menu items with precise humidity control.

High Performance Cooking Features

The oven includes eight fan speeds with balanced reverse rotation to ensure even airflow throughout the cooking chamber. A sub-divided heating system improves temperature recovery during cooking, helping maintain consistent heat when the door is opened during service.

The Smart Touch rack timing feature allows efficient mixed-load batch cooking, making the oven ideal for banquet kitchens, buffet preparation, and à la carte restaurant service.

Connectivity and Remote Monitoring

WiFi connectivity allows operators to monitor oven performance remotely. Real-time operating status, diagnostic alerts, and service notifications can be accessed through a connected tablet or smartphone. USB storage allows recipes, programs, and HACCP data to be transferred between multiple units and kitchen locations.

Automated Cleaning System

The integrated Combi Wash system includes six automated cleaning modes based on soil level and usage. Twin chemical fill tanks automatically notify operators when cleaner or rinse levels are low. Once the wash cycle is complete, the oven automatically shuts down and unlocks.

A high-pressure coil wash hose is also included for quick manual rinsing and cleaning between cooking cycles.

Product Description

The Atosa AEC-1011E electric combi oven is a boiler-free unit designed to hold ten half-size sheet pans or ten steam table pans. The oven includes a 10-inch smart touchscreen control system, automated wash programs, WiFi connectivity, USB storage, and a removable core temperature probe.

The unit operates on 208–240V, 60 Hz, three-phase power and draws 55 amps. It is ETL, UL, CSA, NSF, and ENERGY STAR certified for commercial kitchen use.
