48" Chef Base are mainly used to replace equipment stands in order to avoid congestion that would otherwise be caused due to presence of more equipment in the kitchen. Whereas, the equipment stand is used as a base for any work station. You can also put your griddles and stove on top of equipment stand but it can’t provide direct approach to fresh ingredients like those of fruits, vegetables, cheese and meat because it is empty from the inside as compared to chef bases that are equipped with heavy-duty cooling system like refrigerators. It only provides space for kitchen utensils, food pans, spoons and other dry things.
You should manage good airflow in your kitchen for proper ventilation in order to ensure efficient working of your cooking equipment and chef base both because they create warm air just like other freezers and refrigerators. You might also have to measure the size of your top-equipment from the spec sheet to know if it fits correctly on top of your chef base.
